The Easiest Instant Pot Chicken Chili in Less Than 1 Hour!

After a long weekend of travel and work we needed something quick and easy for dinner tonight. Thank goodness for Instant Pot Chicken Chili!

Caleb and I photographed a wedding in Golden, Colorado this weekend. When we got home we knew we wanted an easy dinner so that we could relax and spend some time with the doggies before starting another busy week. We got an Instant Pot for Christmas (a little to-me-from-me gift) and we used it for the first time last week and we absolutely LOVED it. For tonight’s meal we knew gathered together ingredients we already had in our freezer and pantry and found we had the perfect ingredients for Chicken Chili!

 

I am so happy with how this turned out because …

 

  1. We used ingredients we already had in the house.
  2. It was a easy & healthy meal; high protein, high fiber, low sugar, and low fat.
  3. It is insanely easy & took a little less than an hour with prep and clean up.
  4. It tasted SO DANG AMAZING!

 

The Easiest Instant Pot Chicken Chili in Less Than 1 Hour!

 

Ingredients

4 Frozen Chicken Breasts

2 Cans Kidney Beans

1 Can Diced Tomatoes

3 Tablespoons Ketchup

1 Onion

1 Teaspoon Cumin

1 Tablespoon Chili Powder

1 Clove of Garlic

1 Teaspoon Crushed Red Pepper

1 Teaspoon Cayenne Powder

1/2 Box of Orecchiette Pasta

Directions

Add all ingredients to Instant Pot.

Press “Pressure Cook” and set the timer for 15 minutes (if chicken is frozen) and 8-10 minutes if it is not frozen.

Let the pressure release for 10-15 minutes.

While pressure cooking is doing its magic, bring water to boil and cook your orecchiette as instructed on its box.

Remove chicken breasts and shred, then add back to instant pot.

Strain your noodles and add to serving bowls.

Pour chili over noodles, top with cheese or avocado if desired & enjoy!

Side Note

I have some allergies and a sensitive stomach so we like to keep our meals relatively healthy and basic. This meal was also a way to clear out things from our pantry so we just through together something with what we had. You can definitely add other ingredients such as black beans, corn, or fresh peppers.

In the market for an Instant Pot? We love ours! We went with the Instant Pot DUO Plus 60. We like the multiple function buttons and cannot wait to try using all of them.
