Made with pantry essentials, this easy chili recipe consists of chicken cooked until tender, spiced with garlic and cumin, and finished off with our favorite chili toppings like sour cream, cheese, and fresh jalapeños.

Our Busy Weekend

Caleb and I photographed a wedding in Golden, Colorado, this weekend. When we got home, we knew we wanted an easy dinner to relax and spend some time with the doggies before starting another busy week.

We got an Instant Pot for Christmas (a little to-me-from-me gift), and we used it for the first time last week, and we LOVED it. For tonight’s meal, we gathered together ingredients we already had in our freezer and pantry and found we had the perfect ingredients for Chicken Chili!

I am so happy with how this recipe turned out because …

  1. It uses ingredients we already have in the house.
  2. It is an easy & healthy meal; with high protein, high fiber, low sugar, and low fat.
  3. It is insanely easy & takes a little less than an hour with prep and clean up.
  4. It tastes SO DANG AMAZING!

The Easiest Instant Pot Chicken Chili in Less Than 1 Hour!

Ingredients

  • 4 Frozen Chicken Breasts
  • 2 Cans Kidney Beans
  • 1 Can Diced Tomatoes
  • 3 Tablespoons Ketchup
  • 1 Onion
  • 1 Teaspoon Cumin
  • 1 Tablespoon Chili Powder
  • 1 Clove of Garlic
  • 1 Teaspoon Crushed Red Pepper
  • 1 Teaspoon Cayenne Powder
  • 1/2 Box of Orecchiette Pasta
  • Optional: chili toppings: sour cream, cheese, sliced avocado, and fresh jalapeños.

Directions

  • Add all ingredients to Instant Pot.
  • Press “Pressure Cook” and set the timer for 15 minutes (if the chicken is frozen) and 8-10 minutes if it is not frozen.
  • Let the pressure release for 10-15 minutes.
  • While pressure cooking is doing its magic, bring water to boil and cook your orecchiette as instructed on its box.
  • Remove chicken breasts and shred, then add back to the Instant Pot.
  • Strain your noodles and add to serving bowls.
  • Pour chili over noodles and top with cheese, fresh jalapeños, sour cream, or sliced avocado if desired & enjoy!

Side Note

I have some allergies and a sensitive stomach, so we like to keep our meals relatively healthy and basic. This meal was also a way to clear out things from our pantry, so we just threw together something with what we had. You can add other ingredients, such as black beans, corn, or fresh peppers.
